Vermicilli Kheer
(semiyaa Kheer or payasam)

ORIGIN :
"Vermicilli kheer" (semiyaa Kheer or payasam) is a popularly made dish in India for grand occasions.It is rich in maida and milk.It is a healthy dish for kids as it is rich in fat.

INGREDIENTS

vermicilli - 1/2 cup

Water - 1 cup.

Milk - 1 litre (thick)

Sugar - 11/2 cups.

Cardamom powder - 1/2 tsp.

cashew nuts - 6.

Ghee - 1 tsp.

PROCEDURE

Step 1:Fry vermicilli in a 1/2 tsp. of ghee in a frying pan for 5 minutes.

Step 2:Boil one cup of water and when it begins to boil ,add the ghee fried vermicilli into it and let it boil until the vermicilli is cooked fully.

Step 3:Keep on mixing the vermicilli while boiling in water.

Step 4:Add 1 litre of boiled milk to the boiled vermicilli and boil for 10 minutes (keep mixing).

Step 5:After 10 minutes,remove from heat and add sugar and cardamom powder to it .

Step 6:Now,fry the cashewnuts in ghee and add these to the keer prepared above.

Step 7:Serve hot or cold .

NOTE:

*Take all the ingredients in the above mentioned quantity only.
*Add sugar to the keer after removing from heat or else the milk would get spoiled.
