Rava Dosa

ORIGIN:
"Rava Dosa" is a popular south Indian Dish typically made out of "Bombay Rava" ."Rava" is an extract of maida ,whereas "Chamba Rava" is an extract of wheat.Generally, rava dosai is made out of "Bombay Rava" only and not using "Chamba Rava".The same "Bombay Rava " is usually used to make kichdis or uppmaas.

INGREDIENTS

Bombay Rava - 1 cup.

Maida - 1 cup.

Rice flour - 1 cup.

curd - 1/4 cup.

Green chillis - 4 pieces

Onion - 2 (medium - sized)

Mustard seeds - 1 tsp.

Curry Leaves - 2 tsps.

Oil - 2 tsps per dosa.

Salt - to taste.

PROCEDURE

Step 1:Mix Bombay Rava , Maida,Rice flour,curd,salt (1 tsp.) together in a bowl .

Step 2:Add 5 cups of water to the above made mixture.

Step 3:Now keep this mixture aside for 3 hours.

Step 4:After 3 hours, chop the onions and curry leaves into fine pieces.

Step 5:Mix the chopped onions and durry leaves to the flour mixture.

Step 6:Heat oil in a small frying pan ,add mustard seeds to it and allow it to sputter,now add the mustard seeds to the dough(flour mixture).

Step 7:Take a flat dosa pan (TAVA)and apply oil on it and heat for 1 minute .

Step 8:Now take 8 tbsps. of flour mixture and spread it on the pan in a circular shape ,add 1 tsp. of oil around the sides of the circle.

Step 9:When one side of the dosa turns brown,turn it and add 1 tsp. of oil again on this side corners.

Step 10:Wait until this side is also cooked .

Step 11:Fold into a half and serve hot with coconut chutney /sambar.

NOTE:

*Take all the ingredients in the above mentioned quantity only.
*Immediately spread the flour on the tava,if you take long toime,it would stick to it.
