DHAL BEANS/CABBAGE CURRY
(Paruppu Usili)

ORIGIN
'Dhal Beans/Cabbage Curry' popularly known as 'Paruppu Usili' is a must sidedish in every marriage celebration and festival in the Brahmin (IYER & IYENGAR) family of South India (Tamil Nadu).It exists from the middle 18th century.

INGREDIENTS

Thuvar Dhal - 1 Cup
Oil - 4 tbs.
Red Chilli - 6 in nos.
Salt - 1 tsp.
Asafoetida - a pinch
Mustard seeds - 1 tsp.
Beans / Cabbage - 200 gms.

PROCEDURE

Step 1:Soak the Thuvar Dhal (1 Cup) in the water ( till the dhal is immersed in water,add water to the Dhal),
for about 3 to 4 hours.

Step 2:Chop the Beans or Cabbage vegetable into small fines pieces.

Step 3:Now , take the chopped vegetable in afrying pan,add 1 1/2 cup of water to it and boil till all the water in it vapourises.

Step 4:Now, take the soaked dhal and grind it in the mixer-grinder with 6 red chillis to make a
thick paste.

Step 5:Heat the grinded paste in a pressure cooker(without using the cooker weight)
for 10 minutes.

Step 6:After the heated paste cools down to normal temperature ,mix it to get a loose
solid mixture.

Step 7:Now, mix the boiled vegetable,the boiled dhal mixture,salt and asafoetida (a pinch),
in a frying pan.Pour 4 tbs of oil into it and fry the mixture for about 15 minutes.

Now,the Dhal Beans/Cabbage Curry is ready to serve.
Serve hot with rice.

NOTE :
*Do not Soak the Thuvar Dhal for a shorter period.
*Do not over heat the curry using Full Flame .
*Always heat in a normal flame first and then after sometime reduce the flame to sim (sim in gas stove)
