Coconut kheer

ORIGIN :

"Coconut kheer is a popular Brahmin (south indian-Palakadd) dish prepared on festive as well as auspicious occassions.Its main ingredient is coconut rich in fat.So,diabetic and heart patients stay away!

INGREDIENTS

Grated Coconut -2 cups.

Milk - 1 cup.

Raw rice - 1 tsp.

Cardamom powder -1tsp.

Ghee - 1 tsp.

Cashew nuts - 25 gms.

Jaggery - 1/4 kg.

Water - 2 cups.

PROCEDURE

Step 1:Grind the grated coconut with 1 tsp. of raw rice (add water and grind) in a mixer-grinder into a coarse paste.

Step 2:Add 2 cups of water to the grinded paste and boil for 7 minutes and mix well.

Step 3:Now,add jaggery to the above boiling mixture and boil again for 5 minutes .

Step 4:Add cardamom powder and ghee fried cashew nuts into the boiling mixture and mix well.

Step 5:Remove from heat.

Step 6:Add milk to the mixture and mix well.

Serve hot or cold.

NOTE:

*Take all the ingredients in the above mentioned quantity only.

*Do not refrigerate the kheer while it is hot,allow it to cool down to room temperature.

*Keep on mixing well while the kheer is boiling .

*Boil on low flame of heat.
